Anna Jansen, of Alna, plans to open The Head Tide Oven on Main Street in Damariscotta, across from Hannaford Supermarket, by early August.
Jansen graduated first in her class at culinary school and has been doing small-scale baking for 18 years. Before deciding to open The Head Tide Oven, Jansen baked out of her home, selling bread to Sheepscot General Store, farmers markets, Morning Dew Farms, and Treats.
Jansen bakes her sourdough-based bread with Maine organic grains and extra ingredients like olives, herbs, and apricots.
“When you make artisan bread, it’s all about time, temperature, and fermentation,” she said.
The Main Street location has two buildings. Jansen plans to use one for baking and the other for retail.
“I want to bake bread for people who don’t have time to do it themselves,” said Jansen.
