No longer will The Village Bakery & Café in Waldoboro be an early morning stop for coffee and a cinnamon roll, but the business’s new hours will help the bakery cut costs and more effectively serve its customers, according to Liz Petruska.
Petruska, a co-owner of the business with Jess Hunter, said they have really enjoyed their customers’ support of their 6:30 a.m. to 3 p.m. hours over the past three years, but the business has only been able to support one employee in the bakery at a time.
“You’ll be in the middle of six dozen bagels and trying to make an omelet at the same time and that doesn’t always work,” Petruska said.
The hope is that separating the production and sale of bulk baked goods from the café end of the business will make it possible to do both things better, she said.
The bakery has been closed since Sept. 29. When it re-opens on Friday, Oct. 4, new hours will be in effect.
On Mondays, Wednesdays, and Friday, the bakery will be open from 3 to 6 p.m. with what Petruska described as a “market-style” offering, such as a variety of bagels, breads, baguettes, and other baked goods like cinnamon rolls and croissants.
“Instead of doing coffee in the morning and lunches we’re going to focus on providing our bulk baked goods,” she said.
On Fridays, the bakery will offer a wider range of products including things like whole pies and quiches so customers can stock up for the weekend.
“We’ll still be doing orders and catering any time, so if someone needs to pick something up during our non-business hours we’ll be able to do that,” Petruska said.
The bakery’s brunches, traditionally held the first and third Sundays of each month, will now be offered every Saturday and Sunday, from 9 a.m. to 1 p.m.
