The executive chef of a Mexican restaurant in Arizona invites all to experience the true flavor of Mexico with a one-time dinner at Deb’s Bristol Diner on Wednesday, July 3.
Maria Mazon, executive chef, founder, and owner of Boca Tacos y Tequila in Tucson, Ariz., will prepare the all-inclusive meal, with settings at 5 and 6:30 p.m.
Mazon was raised in Sonora, Mexico. She and her restaurant have appeared on the Food Network shows “Chopped,” “Ginormous Food,” and “You Gotta Eat Here!” as well as the Travel Channel’s “Best Places to Pig Out.”
“I am representing Mexican food the right way,” Mazon said. “I don’t use ground beef. I don’t use sour cream. I don’t use yellow cheese.”
From her tortillas to her salsas, Mazon makes everything from scratch and cooks with only local ingredients.
Mazon looks forward to finding local ingredients in Lincoln County. She will bring her own tortilla press, dried chiles, and Mexican sea salt to cook with.
The menu for the dinner includes four courses: a guacamole duo with salsas and fresh-cut fried chips; caldo de queso, a tomato-base broth with queso fresco, potatoes, and grilled green chile, from Sonora, Mexico; fresh-made corn tortillas with Oaxaca cheese stuffed with squash blossoms and hoja santa, from Mexico City; and taco pescado in a pibil sauce – fresh fish wrapped in banana leaves with a sour orange achiote sauce – from Mexico’s Yucatan Peninsula.
Mazon intends to showcase as many flavors as she can. She includes the origin of the dishes on the menu so people will know what region of Mexico they’re tasting.
Barrett Silver, landlord of Deb’s Bristol Diner, helped Mazon with the business management of Boca Tacos y Tequila for 10 years.
He now lives in Round Pond with his family, so he invited Mazon to hold the event at the diner and experience the charm of Lincoln County.
“I’m just excited to cook and bring the flavors of Mexico to Maine,” Mazon said.
